Caldo Verde – Potato Puree Soup With  Shredded Greens

Ingredients

300-gm Kale leaves chopped

2 cups water

2 potatoes boiled and mashed

Salt  and Pepper to taste

Olive oil and olives to garnish.

Method

Put onions in pan with little oil till they turn transparent then add the Kale leaves and boil with

1 cup of water. Add the potatoes and 1 cup water till it reaches the desired consistency.

Add salt, pepper, olives and olive oil. Serve hot.

Camarão Frito – Fried Prawns In Goan Masala

Ingredients

10 to 12 medium-sized prawns, shelled & salted

1 tbsp oil

Recheado masala (red chilli masala)

Coriander for garnish

Method

Heat oil in a flat pan

Add prawns & cook till orange in colour

Add the masala and fry.

Serve hot, garnished with chopped  coriander.

Galinha Piri Piri – Fried Chicken Marinated In PiriPiri Paste AndGoan Herbs

Ingredients

1/2 kg chicken

2 tbsp oil

For marination

1/2 ginger

1 head garlic

2 green chillies

1 tbsp vinegar

A pinch of saffron, pepper and salt

Method

Wash the chicken and cut it into 2 pieces, mix marinade and keep the chicken covered for 1 hour.

In a pan, heat the oil and put the chicken, cover it and cook it on a slow fire till brown and crisp.

Serve with salad and french fries.

Escabecha De Peixe – Fish In A Tangy Tomato Gravy with Potatoes

Ingredients

2 Fish fillets washed and salted

1 large onion sliced

1 tomato sliced

1 red, 1 yellow and 1 green bell pepper sliced

1 tbsp olive oil

1/2 cup water

Basil and coriander to garnish

Method

Fry onion, tomato and peppers in a teaspoon of olive oil.

Add fish along with salt and pepper.

Add 1/2 cup water and cook on medium heat till the gravy thickens.

Garnish with basil, coriander and olive oil.

Pudim De Caramelo – Cream Of Caramel

Ingredients 

For Caramel

3/4 cup water

3/4 cup sugar

For Custard

6 eggs

200 gms caster sugar

2 cups milk

300ml thick cream

2 tbsp vanilla essence

Method 

For Caramel

Combine water and sugar in a saucepan. Stir until the sugar dissolves. Bring to a boil till golden brown. Pour into a mold and cover base with caramel.

For Custard

Lightly whisk eggs, essence and sugar in a bowl. Combine milk & cream in a pan and bring to a boil. Add whisked eggs into the mixture. Pour it over the caramel place the mold in a baking dish with enough water to reach halfway up the mold. Bake for 40 minutes in the oven. Remove and chill.
